Summer Soup

1/2 English cucumber
2 cups plain 2% yogurt
1 clove garlic, minced
2 tsp fresh dill
1/4 tsp ground pepper
dill sprigs
- Peel about one half of the cucumber, leaving some skin on; cut into 1-inch pieces.
- In a blender or food processor, combine cucumber, yogurt, garlic, dill and pepper; process until completely pureed.
- Chill for 1 hour or overnight.
- Garnish each portion with dill sprigs.
